Carol'S Spinach Bread

- 1 (10 oz.) pkg. frozen chopped spinach
- 2 Tbsp. grated onion
- 1 clove garlic, minced
- 1/2 c. butter, melted
- 1 c. shredded sharp Cheddar cheese
- 1 c. shredded Mozzarella cheese
- 1 (16 oz.) loaf French bread
- 1/4 c. grated Parmesan cheese
Directions

1Cook spinach according to package directions; drain.

2Press between layers of paper towels to remove excess moisture.

3Set aside; saute onion and garlic in butter in a small skillet over medium heat until tender.

4Combine onion mixture, spinach, Cheddar cheese and Mozzarella cheese; stir well.

5Slice bread in half horizontally.

6Spread spinach mixture evenly on cut sides of bread; sprinkle with Parmesan cheese.

7Place on an ungreased baking sheet.

8Bake at 350° for 10 minutes or until cheese melts. Yield: 8 servings.
