- 1 unbaked pie crust
- 8 Tbsp. butter, at room temperature
- 1 tsp. vanilla extract
- 1/2 c. white raisins
- 1 c. sugar
- 3 large eggs, at room temperature
- 1/2 c. chopped pecans
- 1/2 c. coconut
Directions

1In large mixer bowl, cream butter and sugar on medium speed of electric mixer until light.

2Add eggs, one at a time, beating well after each addition.

3Add vanilla.

4Stir in pecans, raisins and coconut.

5Mix well.

6Pour filling into crust.

7Bake at 300° for 45 minutes.

8Serve warm or cold with whipped cream.
