Carrot And String Bean Casserole

- 3 c. cooked green beans
- 3 c. cooked sliced carrots
- 4 Tbsp. fat or margarine
- 1 small onion, minced
- 3 Tbsp. flour
- 3/4 c. soft bread crumbs
- 2 c. milk
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 c. medium-sharp grated cheese
- 2 eggs, beaten slightly
Directions

1Melt margarine in saucepan.

2Add onion and cook until tender. Add flour and stir until smooth.

3Next, add milk, salt, pepper and cheese.

4Stir constantly until thickened.

5Remove from heat and pour over slightly beaten eggs.

6Arrange vegetables and sauce in alternate layers in greased casserole dish.

7Top with soft crumbs mixed with 2 tablespoons margarine.

8Bake for 30 minutes in 375° oven.
