- 12 large carrots
- 1/4 c. green pepper, minced
- 1/4 c. onion, minced
- 4 Tbsp. butter or margarine
- 2 Tbsp. flour
- 1 c. milk
- 2 Tbsp. sugar
- 1/2 tsp. salt
- 1 Tbsp. butter or margarine
- 1/2 c. soft bread crumbs
Directions
-
1Peel, slice, steam and mash carrots.

2Saute pepper and onion in 4 tablespoons butter.

3Stir in flour, milk, salt and sugar. Cook until thickened.

4Add carrots and put in greased casserole dish.

5Melt 1 tablespoon butter and add bread crumbs.

6Cook until browned.
-
7Bake at 350° for 30 minutes.

8Serves 6.
