Ingredients

  • 12 large carrots
  • 1/4 c. green pepper, minced
  • 1/4 c. onion, minced
  • 4 Tbsp. butter or margarine
  • 2 Tbsp. flour
  • 1 c. milk
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 Tbsp. butter or margarine
  • 1/2 c. soft bread crumbs

Directions

    Peel, slice, steam and mash carrots.

    Saute pepper and onion in 4 tablespoons butter.

    Stir in flour, milk, salt and sugar. Cook until thickened.

    Add carrots and put in greased casserole dish.

    Melt 1 tablespoon butter and add bread crumbs.

    Cook until browned.

    Bake at 350° for 30 minutes.

    Serves 6.
