- 2 lbs. baby carrots
- 4 small onions, quartered
- 6 garlic cloves, peeled
- 2 T. vegetable or olive oil
- 2 t. cider vinegar
- 1-2 t. dried thyme
- 1/2 t. salt
- 1/8 t. pepper
Directions

1Place carrots, onions, and garlic into greased 15x10 in. baking pan.

2Drizzle with oil and vinegar.

3Sprinkle with thyme, salt, and pepper,

4Gently toss to coat.

5Cover and bake at 450° for 20 minutes.

6Stir. Bake uncovered for 10 minutes; stir again. Bake 10 minutes longer or until carrots are crisp-tender.

7Yields 8 servings.
