- 2 cups sliced carrots, cooked and mashed
- 1 1/2 cups soft breadcrumbs
- 1 cup (4 ounces) shredded sharp Cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Dash of hot sauce
- 1 egg white
- 1 1/4 cups coarsely crushed cornflakes
Directions

1Combine carrots, breadcrumbs, cheese, salt, pepper, and hot sauce; toss lightly. Beat egg white (at room temperature) until stiff peaks form; fold into carrot mixture. (Mixture may be chilled at this stage. )

2Shape mixture into 2-inch balls; roll in cornflakes. Place balls on a lightly greased baking sheet. Bake at 375° for 30 minutes or until golden brown.
