- 3/4 c. sugar
- 1 egg
- 1 c. carrots, cook and mash before measuring
- 2 c. + 2 Tbsp. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. vanilla
- 1 c. coconut
Directions

1Cream shortening, sugar and eggs.

2Add vanilla.

3Mix dry ingredients.

4Add carrots and dry ingredients, alternating; mix. Add coconut.

5Bake 20 minutes at 325° in 9 x 13-inch greased pan.
