Ingredients
- 10 oz. pkg. cut carrots
- 1 1/4 c. flour
- 1 1/2 c. sugar
- 1/3 c. brown sugar
- 1 tsp. salt
- 1 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/3 c. cooking oil
- 2 eggs, beaten
- 1/3 c. water
- 1 tsp. vanilla
Directions

1Cook carrots; place carrots in blender and grate coarsely, but do not puree.

2In a large bowl, combine flour, salt, baking soda, cinnamon and nutmeg.

3Stir together carrots, oil, eggs, water and vanilla.

4Add dry ingredients.

5Stir until blended.

6Pour batter into greased loaf pan.

7Bake at 350° for 65 to 75 minutes, or until done.

8Check every so often to see if done.

9Cool for 10 minutes.

10Remove from pan and serve.
