Ingredients
- 2 c. flour
- 2 tsp. soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1 1/2 c. sugar
- 1/2 c. dried currants
- 1/2 c. flaked coconut
- 1/2 c. pecans, chopped
- 1 c. vegetable oil
- 2 tsp. vanilla extract
- 2 c. grated raw carrots
- 3 eggs
Directions

1Mix dry ingredients together.

2Add currants, coconut and nuts. Add remaining ingredients and mix well.

3Pour into a greased 9 x 5 x 3-inch loaf pan.

4Let stand 20 minutes.

5Bake in moderate oven at 350° for about 1 hour.

6Cool slightly and remove from pan.

7When cold, wrap and refrigerate.

8Cut in thin slices and serve with cream cheese, butter, cottage cheese or other spread.
