Ingredients

  • 2 c. flour
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/2 c. sugar
  • 1/2 c. dried currants
  • 1/2 c. flaked coconut
  • 1/2 c. pecans, chopped
  • 1 c. vegetable oil
  • 2 tsp. vanilla extract
  • 2 c. grated raw carrots
  • 3 eggs

Directions

    Mix dry ingredients together.

    Add currants, coconut and nuts. Add remaining ingredients and mix well.

    Pour into a greased 9 x 5 x 3-inch loaf pan.

    Let stand 20 minutes.

    Bake in moderate oven at 350° for about 1 hour.

    Cool slightly and remove from pan.

    When cold, wrap and refrigerate.

    Cut in thin slices and serve with cream cheese, butter, cottage cheese or other spread.
