- 1 c. sugar
- 1/2 c. vegetable oil
- 1 1/2 c. flour
- 2 tsp. soda
- 1/4 tsp. cinnamon
- 1 c. grated carrots
- 1/2 tsp. salt
- 2 eggs
- 1/2 c. chopped nuts
Directions

1Preheat oven to 350°.

2Mix sugar and oil.

3Add sifted dry ingredients and carrots.

4Add eggs, one at a time, beating well after each addition.

5Add nuts and blend well.

6Turn into an oiled 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan.

7Bake 50 to 60 minutes or until done.

8Cool, remove from pans and turn onto wire racks.
