- 1 12 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 14 teaspoon cinnamon
- 34 cup sugar
- 12 cup oil
- 2 eggs
- 1 12 cups shredded carrots
- 1 cup nuts
- 12 cup raisins (optional)
Directions

1Preheat oven to 350.

2in a small bowl whisk together flour, baking soda, baking powder and cinnamon.

3In a large bowl mix sugar, oil and eggs.

4Mix in flour mixture.

5Gently fold in carrots, nuts and raisins.

6Pour batter into a greased bread pan.

7Bake for 45 minutes or until sides pull away from pan.

8Zucchini can be substituted for the carrots, use 2 cups of shredded zucchini for carrots.
