- 3/4 c. sugar
- 2 eggs, beaten
- 1 c. vegetable oil
- 1 tsp. vanilla
- 1 1/2 c. grated carrot
- 1 Tbsp. grated orange rind
- 1 tsp. lemon juice
- 1 1/2 c. flour, sifted
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 tsp. cinnamon
- dash of nutmeg
- 1 c. finely chopped nuts
Directions

1Combine sugar, eggs, oil and vanilla in mixing bowl.

2Stir in carrot, orange rind and lemon juice.

3Sift together flour, soda, salt and spices; stir into first mixture.

4Fold in nuts.

5Pour batter into a greased loaf pan and bake in 350° oven for 1 hour.
