Ingredients
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1 1/2 c. sugar
- 1 c. salad oil
- 1 tsp. vanilla
- 2 c. finely grated carrots
- 3 eggs
- 1/2 c. raisins
- 1/2 c. flaked coconut
- 1/2 c. chopped nuts
Directions

1Combine flour, baking powder, cinnamon, salt and sugar in mixing bowl.

2Add salad oil, vanilla, carrots and eggs.

3Mix until well blended.

4Fold in raisins, coconut and nuts.

5Pour into a greased 9 x 5 x 3-inch loaf pan.

6Bake at 350° for 1 hour and 15 minutes.

7Turn out of pan and cool on rack.

8Do not slice until bread has cooled completely.
