- 1 1/2 c. shredded carrots
- 3/4 c. sugar
- 1/3 c. chopped nuts
- 1/4 c. sour cream
- 1/4 c. vegetable oil
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. vanilla
- 3 eggs
Directions

1Preheat oven to 350°.

2Grease bottom only of loaf pan.

3Mix all ingredients.

4Beat 30 seconds.

5Pour in pan.

6Bake until pick inserted in center comes out clean, 50 to 55 minutes.
