- 2 1/4 c. flour
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3/4 c. sugar
- 1/2 c. chopped nuts
- 1 1/2 c. lightly packed shredded raw carrots
- 1/4 c. vegetable oil
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. vanilla
- 3 eggs
Directions

1Mix well all ingredients.

2Grease only bottom of a 9 x 5 x 3-inch pan.

3Bake 50 to 55 minutes at 350°, or until a wooden pick inserted in center comes out clean.

4Cool 10 minutes.

5Loosen sides with a knife and remove from pan.

6Freezes well.
