  • 2 1/4 c. flour
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 c. sugar
  • 1/2 c. chopped nuts
  • 1 1/2 c. lightly packed shredded raw carrots
  • 1/4 c. vegetable oil
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. vanilla
  • 3 eggs

Directions

    Mix well all ingredients.

    Grease only bottom of a 9 x 5 x 3-inch pan.

    Bake 50 to 55 minutes at 350°, or until a wooden pick inserted in center comes out clean.

    Cool 10 minutes.

    Loosen sides with a knife and remove from pan.

    Freezes well.
