- 2 c. flour
- 2 tsp. baking powder
- 1 1/2 tsp. salt
- 2 tsp. cinnamon
- 2 c. sugar
- 1 1/2 c. salad oil
- 4 eggs
- 1 1/2 tsp. baking soda
- 2 c. finely grated carrots
- 1 (8 1/2 oz.) can crushed pineapple, drained
- 1/2 c. chopped nuts
Directions

1Mix together flour, baking powder, baking soda, salt and cinnamon.

2Add sugar, oil and eggs; beat well.

3Add carrots, pineapple, and nuts; blend thoroughly.

4Pour into greased and floured 10 x 14-inch pan or 3 (9-inch) round layer cake pans. Bake at 350° for 35 to 40 minutes for layer pans, 40 to 50 minutes for 10 x 14-inch pan.

5Cool 5 minutes in pan before turning out to cool thoroughly.
