- 3 c. grated carrots
- 2 c. sugar
- 4 eggs
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 1/2 c. vegetable oil
- 1 c. chopped nuts
- 2 c. flour
- 2 tsp. baking soda
Directions

1Mix carrots, sugar, eggs, vegetable oil and nuts by hand.

2Mix well and add the flour, salt, soda and cinnamon.

3Mix all by hand; do not beat.

4Bake at 375° for 40 to 45 minutes in a well-greased cake pan.

5Cool well and ice with cream cheese icing.
