  • 2 c. flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. grated carrots
  • 1 (8 oz.) can crushed pineapple, drained
  • 1 1/2 c. nuts, chopped

Directions

    Stir together dry ingredients (not sugar). Add sugar and oil and mix well. Stir in carrots, drained pineapple and nuts. Turn into 3 greased and floured 9-inch pans or 1 (9 x 13) pan. Bake at 350° for 35 to 40 minutes. Let cool.
