  • 4 eggs
  • 2 c. sugar
  • 1 1/2 c. Wesson oil
  • 2 1/2 c. flour
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1 1/2 tsp. vanilla
  • 1 c. crushed pineapple, drained
  • 2 c. carrots, finely shredded
  • 1 c. pecans

Directions

    Mix sugar and oil. Add dry ingredients and alternate with eggs.

    Add crushed pineapple, carrots, pecans and vanilla. Bake in a well-greased pan at 350°.
