- 2 1/2 c. flour
- 2 tsp. soda
- 2 tsp. cinnamon
- 1 1/2 tsp. vanilla
- 1 c. crushed pineapple, drained
- 2 c. carrots, finely shredded
- 1 c. pecans
Directions

1Mix sugar and oil. Add dry ingredients and alternate with eggs.

2Add crushed pineapple, carrots, pecans and vanilla. Bake in a well-greased pan at 350°.
