  • 1 c. oil (Wesson or Crisco)
  • 2 c. sugar
  • 4 eggs
  • 2 c. flour (all-purpose)
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 3 c. grated carrots

Directions

    Cream together oil and sugar.

    Add eggs (one at a time).

    Sift together and add flour, soda, salt and cinnamon.

    Last, add carrots.

    Bake at 350° for 30 to 45 minutes.

    Makes a large cake or 2 (9-inch) layers.
