Ingredients

  • 1 c. margarine
  • 1/2 c. vegetable oil
  • 2 c. sugar
  • 4 eggs
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 2 tsp. vanilla
  • 1/2 tsp. salt
  • 2 1/4 c. flour
  • 1 (10 oz.) can crushed pineapple with juice
  • 3 c. shredded carrots
  • 1 to 1 1/2 c. chopped nuts (optional)

Directions

    Blend 2 cups flour, soda, cinnamon and salt; set aside. Combine sugar, margarine and oil in bowl; beat thoroughly, after each addition.

    Add dry ingredients alternately with pineapple (beginning and ending with flour).

    Add 1/4 cup flour with nuts and carrots.

    Fold this in last.

    Pour into greased and floured 9 x 13 x 2-inch cake pan.

    Bake in 350° oven for 40 to 45 minutes. Test to check if done.

    Cool cake and frost with frosting.
