- 1 c. margarine
- 1/2 c. vegetable oil
- 2 c. sugar
- 4 eggs
- 2 tsp. soda
- 2 tsp. cinnamon
- 2 tsp. vanilla
- 1/2 tsp. salt
- 2 1/4 c. flour
- 1 (10 oz.) can crushed pineapple with juice
- 3 c. shredded carrots
- 1 to 1 1/2 c. chopped nuts (optional)
Directions

1Blend 2 cups flour, soda, cinnamon and salt; set aside. Combine sugar, margarine and oil in bowl; beat thoroughly, after each addition.

2Add dry ingredients alternately with pineapple (beginning and ending with flour).

3Add 1/4 cup flour with nuts and carrots.

4Fold this in last.

5Pour into greased and floured 9 x 13 x 2-inch cake pan.

6Bake in 350° oven for 40 to 45 minutes. Test to check if done.

7Cool cake and frost with frosting.
