  • 3 c. finely grated raw carrots
  • 1/2 c. chopped walnuts
  • 1 c. Crisco oil
  • 2 c. sugar
  • 4 eggs (beaten)
  • 2 c. flour
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 (8 oz.) pkg. cream cheese (softened)
  • 1/4 c. margarine (softened)
  • 2 tsp. vanilla
  • 1 1 pound box confectioners sugar

Directions

    Prepare carrots and nuts.

    Cream together the oil, sugar and eggs.

    Combine flour, soda, cinnamon and salt, sift into the egg and sugar mixture.

    Blend together well. Fold in carrots and nuts. Bake in a 9 x 13 greased pan at 300° for 1 hour.

    Cool and frost.
