- 3 eggs
- 2 c. sugar
- 1 1/4 c. vegetable oil
- 3 c. all-purpose flour
- 2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 c. chopped nuts
- 1 (20 oz.) can crushed pineapple, drained
- 2 tsp. vanilla
- 1 1/2 c. grated carrots
Directions

1Combine eggs, sugar and oil in a large mixing bowl with electric mixer.

2Mix well.

3Gradually beat in flour, soda, salt and cinnamon.

4Stir in carrots, nuts, pineapple and vanilla.

5Pour batter into a greased and floured 10-inch tube pan.

6Bake at 350° for 1 hour and 15 minutes or until inserted toothpick comes out clean.

7Cool 15 minutes.

8Remove from pan.

9May frost with your favorite frosting.
