- 2 c. sugar
- 1 1/2 c. vegetable oil
- 3 eggs
- 2 tsp. vanilla
- 1 c. chopped walnuts
- 1 c. chopped raisins
- 2 1/2 c. flour
- 2 c. shredded carrots
- 2 c. flaked coconut
- 18 oz. can crushed pineapple, drained
- 2 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
Directions

1Combine sugar, oil, eggs and vanilla in a large bowl; use wooden spoon.

2Stir in flour, cinnamon, powder and soda.

3Mix well. Fold in rest of the ingredients.

4Place in a greased Bundt pan or 9 x 13-inch pan.

5Bake for 1 hour at 350°.

6Let cool, then remove from pan.
