Ingredients

  • 2 c. plain flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 3 c. grated carrots
  • 1 tsp. cinnamon
  • 2 c. sugar
  • 1 1/2 c. vegetable oil
  • 4 eggs

Directions

    Mix dry ingredients; add oil and blend.

    Add eggs, one at a time, beating after each addition.

    Add carrots and blend well. Pour equal amounts into prepared 3 layer pans and bake at 350° for 30 minutes or in prepared 13 x 9-inch pan for 1 hour.
