  • 2 c. sugar
  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. flour
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1/2 c. chopped pecans
  • 3 jars (No. 3) baby food carrots

Directions

    Cream sugar and oil together.

    Add eggs, blending well.

    Sift dry ingredients and add alternately with carrots.

    Stir in pecans and pour into greased and floured pan(s).

    Bake 1 hour in 300° oven.
