- 1 1/2 c. oil
- 4 eggs
- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1 tsp. salt
- 1/2 c. chopped pecans
- 3 jars (No. 3) baby food carrots
Directions

1Cream sugar and oil together.

2Add eggs, blending well.

3Sift dry ingredients and add alternately with carrots.

4Stir in pecans and pour into greased and floured pan(s).

5Bake 1 hour in 300° oven.
