- 1 3/4 c. sugar
- 3 eggs
- 1 c. vegetable oil
- 1 3/4 c. sifted flour
- 2 tsp. cinnamon
- 1 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 3 c. grated carrots
- 2/3 c. chopped nuts
- pinch of salt
Directions

1In mixing bowl, beat sugar and eggs until thickened; add oil. Sift flour; add baking soda, baking powder, cinnamon and salt together.

2Add to egg mixture.

3Fold in carrots and nuts.

4Pour batter into prepared pans; bake in preheated oven at 350° for 45 to 55 minutes.

5Remove from pan; let get completely cold.

6Serve with Cream Cheese Frosting.
