Ingredients

  • 2 c. all-purpose flour
  • 1 1/2 c. sugar
  • 1 tsp. cinnamon
  • 2 tsp. soda
  • 3/4 c. buttermilk
  • 1 tsp. mace (optional)
  • 1/2 tsp. salt
  • 2 tsp. vanilla
  • 1 (8 1/2 oz.) crushed pineapple
  • 1/2 c. oil
  • 3 eggs
  • 1 c. coconut (I prefer frozen)
  • 1 c. nuts
  • 2 c. grated carrots

Directions

    Combine flour, sugar, cinnamon, mace and salt.

    (Mix soda in buttermilk.)

    Blend into dry ingredients oil, eggs and buttermilk. Add pineapple, coconut, nuts and carrots.

    Bake 3 layers at 350° for 25 minutes.
