- 1 1/4 c. oil
- 3 eggs
- 2 c. sugar
- 2 tsp. vanilla
- 2 1/4 c. flour
- 2 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. allspice
- 2 tsp. soda
- 1 tsp. salt
- 2 c. shredded carrots
- 2 c. shredded coconut
- 1 c. chopped pecans
- 1 c. plumped raisins
- 8 oz. crushed pineapple (undrained)
Directions

1Beat oil, eggs, sugar and vanilla; hold.

2Mix together flour, cinnamon, nutmeg, allspice, soda and salt and add to first mix and beat well.

3Add carrots, coconut, pineapple, pecans and raisins. Bake in 3 layer pans (greased and floured) at 350° for 50 minutes. Cool completely and frost.
