  • 1 1/4 c. oil
  • 3 eggs
  • 2 c. sugar
  • 2 tsp. vanilla
  • 2 1/4 c. flour
  • 2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. allspice
  • 2 tsp. soda
  • 1 tsp. salt
  • 2 c. shredded carrots
  • 2 c. shredded coconut
  • 1 c. chopped pecans
  • 1 c. plumped raisins
  • 8 oz. crushed pineapple (undrained)

Directions

    Beat oil, eggs, sugar and vanilla; hold.

    Mix together flour, cinnamon, nutmeg, allspice, soda and salt and add to first mix and beat well.

    Add carrots, coconut, pineapple, pecans and raisins. Bake in 3 layer pans (greased and floured) at 350° for 50 minutes. Cool completely and frost.
