  • 2 c. sugar
  • 4 whole medium eggs, well beaten
  • 1 1/4 c. shredded carrots
  • 1 c. crushed pineapple, drained
  • 1 1/2 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1/3 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 2/3 Tbsp. vanilla
  • 1 c. chopped walnuts

    Add next 5 ingredients, mix well.

    Add next 2 ingredients and mix well.

    Pour into greased and floured pans.

    Bake at 350° for 30 minutes. Yields three 9-inch pans.
