- 4 whole medium eggs, well beaten
- 1 1/4 c. shredded carrots
- 1 c. crushed pineapple, drained
- 1 1/2 c. flour
- 1 tsp. salt
- 1 tsp. baking soda
- 1/3 tsp. baking powder
- 1 tsp. ground cinnamon
- 2/3 Tbsp. vanilla
- 1 c. chopped walnuts
Directions

1Combine first 5 ingredients.

2Mix well.

3Add next 5 ingredients, mix well.

4Add next 2 ingredients and mix well.

5Pour into greased and floured pans.

6Bake at 350° for 30 minutes. Yields three 9-inch pans.
