  • 1 1/2 tsp. soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1 c. pineapple, drained
  • 2 c. sugar
  • 2 c. carrots, grated
  • 1 c. oil
  • 4 eggs

Directions

    Sift flour, soda, salt and cinnamon.

    Add pineapple, sugar, carrots, oil and eggs.

    Mix together well and bake at 325° for 1 hour or until done.

    Reserve juice from pineapple for frosting.
