  • 2 c. flour
  • 4 eggs
  • 1 1/2 c. oil
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 3 tsp. cinnamon
  • 2 c. sugar
  • 2 to 3 c. grated carrots
  • 20 oz. can crushed, drained pineapple
  • 1 c. chopped pecans

    Combine sugar, eggs, oil and sifted dry ingredients.

    Combine with sugar, eggs and oil.

    Add carrots, pineapple and pecans. Bake at 350° approximately 50 minutes in greased and floured tube pan.
