  • 3 c. grated carrot
  • 2 c. flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2 c. sugar
  • 1 tsp. cinnamon
  • 4 large eggs
  • 3/4 c. vegetable oil
  • 1 tsp. vanilla

Directions

    Combine first seven ingredients in a large bowl; add eggs, oil and vanilla.

    Stir until well blended. Prepare pans for baking and bake at 350°.

    If using round pans, bake 25 minutes; if using a 9 x 13-inch pan, bake for 35 minutes.
