  • 3 c. flour
  • 2 tsp. baking powder
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 2 c. sugar
  • 1 1/4 c. oil
  • 4 eggs
  • 1/2 c. nuts
  • 2 c. grated fine carrots
  • 1 large can crushed pineapple, drained

    Blend sugar and oil together.

    Add 1 egg at a time with carrots, then pineapple and nuts.

    Gradually add dry ingredients. Bake at 350° for 1 hour.
