Ingredients

  • 2 c. flour
  • 1 1/2 to 2 c. sugar
  • 1 c. oil
  • 1 tsp. baking soda
  • 3 tsp. cinnamon
  • 1 tsp. vanilla
  • 4 eggs
  • some raisins and/or nuts (optional)
  • 3 c. grated carrots

Directions

    Mix all ingredients, except carrots, in a bowl until well blended.

    Stir carrots in last.

    Pour into a Bundt pan that is greased and floured.

    Bake at 350° for 30 to 35 minutes or until tested done.
