- 1 1/4 c. vegetable oil
- 2 c. sugar
- 4 eggs, well beaten
- 2 c. flour
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1/2 to 1 c. chopped walnuts
- 3 c. grated carrots
Directions

1Mix oil and sugar; beat well.

2Add eggs and continue beating. Sift flour, cinnamon, baking powder and baking soda.

3Add walnuts to the sifted flour mixture.

4Add nuts and dry ingredients to the oil mixture, then fold in grated carrots.

5Pour cake mix into a greased and floured 9 x 13-inch pan.

6Bake 1 hour in a 350° oven. Refrigerate cake after frosting.
