- 4 eggs
- 1 tsp. vanilla
- 1 c. pecans
- 2 c. sugar
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 1 tsp. salt
- 1 1/2 c. Wesson oil
- 3 c. finely grated carrots
- 2 c. flour
- 2 tsp. baking soda
Directions

1Mix dry ingredients.

2Add oil and vanilla.

3Mix well.

4Add eggs, one at a time and mix.

5Add carrots and nuts.

6Bake at 300° for 40 to 55 minutes in 3 x 9-inch pan or large long pan.

7Ice with cream cheese frosting.

8Do not use electric mixer as cake dough will be very thick.
