  • 4 eggs
  • 1 tsp. vanilla
  • 1 c. pecans
  • 2 c. sugar
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 c. Wesson oil
  • 3 c. finely grated carrots
  • 2 c. flour
  • 2 tsp. baking soda

    Mix dry ingredients.

    Add oil and vanilla.

    Mix well.

    Add eggs, one at a time and mix.

    Add carrots and nuts.

    Bake at 300° for 40 to 55 minutes in 3 x 9-inch pan or large long pan.

    Ice with cream cheese frosting.

    Do not use electric mixer as cake dough will be very thick.
