  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 tsp. baking soda
  • 2 tsp. cinnamon
  • 2 c. sugar
  • 2 c. shredded carrots
  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. grated carrots
  • 1 (16 oz.) can fruit cocktail or crushed pineapple
  • 1/2 c. chopped nuts (optional)
  • 1/2 c. raisins (optional)
  • 1/2 c. grapes (optional)

Directions

    Mix all ingredients until well blended.

    Bake in a 9 x 13-inch greased pan at 350° for 35 to 40 minutes or until done.

    Ice with Cream Cheese Frosting.
