- 3 c. flour
- 3 c. sugar
- 1 tsp. salt
- 1 Tbsp. baking soda
- 1 Tbsp. cinnamon
- 1 1/2 c. oil
- 4 large eggs, slightly beaten
- 1 Tbsp. vanilla
- 1 1/2 c. chopped walnuts
- 1 1/2 c. shredded coconut
- 1 1/3 c. pureed cooked carrots
- 3/4 c. crushed pineapple, drained
- Cream Cheese Frosting
Directions

1Preheat oven to 350°.

2Grease 2 (9-inch) spring-form pans. Sift dry ingredients into bowl.

3Add oil, eggs and vanilla.

4Beat well.

5Fold in walnuts, coconut, carrots and pineapple.

6Pour into pans.

7Bake on middle rack of oven for 50 minutes or until edges pull away and cake tester comes out clean.

8Cool on cake rack for 3 hours.

9Frost cake with Cream Cheese Frosting.
