  • 4 whole Eggs
  • 1-1/4 cup Oil
  • 3 jars (2.5 Oz. Size) Strained Baby Carrots (baby Food)
  • 2 cups Flour
  • 2 teaspoons Baking Soda
  • 3 teaspoons Cinnamon
  • 1 teaspoon Salt

  • FOR THE FROSTING:
  • 8 ounces, weight Cream Cheese
  • 1/2 cups Butter
  • 3-1/4 cups Confectioners Sugar
  • 1/2 teaspoons Vanilla Extract

    Preheat oven to 350°F. Beat together sugar, eggs and oil. Add baby carrots, flour, baking soda, cinnamon and salt. Bake on a cookie sheet for 35 minutes. Mix frosting ingredients and spread on bars when cool.
