Carrot Cake

Ingredients

  • 2 1/4 c. flour
  • 2 c. sugar
  • 1 1/2 c. oil
  • 4 eggs
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. vanilla
  • 1/2 c. chopped nuts (any kind)
  • 2 1/2 c. grated carrots
  • 1 (8 oz.) can crushed pineapple, juice drained

Directions

    Combine sugar and oil; mix until creamy.

    Add eggs; mix well. Add carrots and pineapple.

    Mix flour with dry ingredients; stir into carrot mixture.

    Mixing thoroughly, beat on high for 3 minutes.

    Add nuts.

    Pour into a 9 x 13-inch greased and floured pan, or can use a 10-inch tube tin, greased and floured.

    Bake at 325° for 1 hour, or until done.

    Frost with Cream Cheese Frosting.
