Ingredients
- 2 1/4 c. flour
- 2 c. sugar
- 1 1/2 c. oil
- 4 eggs
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. vanilla
- 1/2 c. chopped nuts (any kind)
- 2 1/2 c. grated carrots
- 1 (8 oz.) can crushed pineapple, juice drained
Directions

1Combine sugar and oil; mix until creamy.

2Add eggs; mix well. Add carrots and pineapple.

3Mix flour with dry ingredients; stir into carrot mixture.

4Mixing thoroughly, beat on high for 3 minutes.

5Add nuts.

6Pour into a 9 x 13-inch greased and floured pan, or can use a 10-inch tube tin, greased and floured.

7Bake at 325° for 1 hour, or until done.

8Frost with Cream Cheese Frosting.
