- 1 c. softened margarine
- 1 c. honey
- 4 eggs
- 1 tsp. vanilla
- 4 medium or 8 small carrots
- 2 c. unsifted flour
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 c. chopped nuts
Directions

1Preheat oven to 375°.

2Mix in a blender butter, honey, eggs, vanilla and carrots (cut up).

3Process at medium speed until carrots are in fine pieces.

4In a bowl combine remaining ingredients.

5Add carrot mixture to dry ingredients and stir until combined.

6Pour into a 13 x 9-inch pan which has been greased and floured.

7Bake 30 to 35 minutes.
