- 2 c. raw sugar
- 1 c. safflower oil
- 4 eggs
- 3 c. sifted, unbleached white flour
- 2 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/4 tsp. salt
- 2 c. grated raw carrots
Directions

1Blend together sugar, oil and eggs.

2Sift together flour, baking powder, soda, cinnamon and salt.

3Add the dry ingredients alternately with the carrots and nuts to the egg mixture.

4Mix well.

5Pour the batter into a well-greased 10-inch tube pan. Bake at 350° for about 1 hour or until cake is done.
