- 3 c. carrots, grated
- 4 eggs, beaten
- 1 1/2 c. salad oil
- 2 c. sugar
- 2 c. flour
- 1/2 tsp. salt
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1 tsp. vanilla
- 1 c. nuts, chopped
Directions

1Mix carrots, oil, eggs and sugar; add dry ingredients (sifted together).

2Blend in vanilla and nuts.

3Bake in greased, floured 9 X 13 pan for 40 minutes at 325°.
