  • 3 c. carrots, grated
  • 4 eggs, beaten
  • 1 1/2 c. salad oil
  • 2 c. sugar
  • 2 c. flour
  • 1/2 tsp. salt
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 1 c. nuts, chopped

Directions

    Mix carrots, oil, eggs and sugar; add dry ingredients (sifted together).

    Blend in vanilla and nuts.

    Bake in greased, floured 9 X 13 pan for 40 minutes at 325°.
