- 2 c. sugar
- 1 1/2 c. vegetable oil
- 4 whole eggs
- 2 c. all-purpose flour
- 2 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1/2 c. chopped nuts
- 3 c. grated carrots
- small can crushed pineapple
Directions

1Cream together sugar and vegetable oil. Beat in eggs, one at a time. Mix flour, soda, salt and cinnamon together and add to oil mixture gradually. Fold carrots, nuts and pineapple into mixture. Bake in three 8-inch layers at 350° for approximately 40 minutes. Cool. Top with Cream Cheese Frosting.
