  • 2 c. sugar
  • 1 1/2 c. vegetable oil
  • 4 whole eggs
  • 2 c. all-purpose flour
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1/2 c. chopped nuts
  • 3 c. grated carrots
  • small can crushed pineapple

Directions

    Cream together sugar and vegetable oil. Beat in eggs, one at a time. Mix flour, soda, salt and cinnamon together and add to oil mixture gradually. Fold carrots, nuts and pineapple into mixture. Bake in three 8-inch layers at 350° for approximately 40 minutes. Cool. Top with Cream Cheese Frosting.
