- 2 c. sugar
- 1 1/2 c. oil
- 1 tsp. vanilla
- 4 eggs, lightly beaten
- 2 c. flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 c. coconut
- 3 c. raw grated carrots
- 1 c. pecan or walnuts chopped
Directions

1Mix the sugar, oil, vanilla and eggs together.

2Sift the flour, baking soda, baking powder, cinnamon and salt together.

3Add the mixtures together and mix well.

4Add the coconut, carrots and nuts. Pour mixture into 9 x 13 pan and bake 1 hour at 300° or 2 round cake pans at 350° for 30 to 35 minutes.

5Cool.
