- 2 c. flour
- 1 1/4 c. sugar
- 2 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1/2 c. vegetable oil
- 3 eggs
- 2 (6 oz. each) jars junior carrot baby food
- 1 (8 oz.) can crushed pineapple in its own juice
- 1/2 c. coconut
- 1/2 c. chopped walnuts
Directions

1Heat oven to 350°.

2Grease tube pan.

3In large bowl, stir together flour, sugar, baking soda and cinnamon.

4Whisk in oil, baby food and eggs until smooth.

5Fold in pineapple with juice and coconut and pour into pan.

6Bake for 1 hour to 1 hour and 15 minutes.
