  • 2 c. flour
  • 1 1/4 c. sugar
  • 2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1/2 c. vegetable oil
  • 3 eggs
  • 2 (6 oz. each) jars junior carrot baby food
  • 1 (8 oz.) can crushed pineapple in its own juice
  • 1/2 c. coconut
  • 1/2 c. chopped walnuts

Directions

    Heat oven to 350°.

    Grease tube pan.

    In large bowl, stir together flour, sugar, baking soda and cinnamon.

    Whisk in oil, baby food and eggs until smooth.

    Fold in pineapple with juice and coconut and pour into pan.

    Bake for 1 hour to 1 hour and 15 minutes.
