  • 4 eggs
  • 2 c. sugar
  • 1 1/4 c. oil
  • 2 c. flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 3 c. finely grated carrots
  • 1/2 c. nuts (optional)
  • 1 tsp. allspice

    Beat eggs, sugar, oil and sifted dry ingredients.

    Add carrots. Stir nuts in last.

    Bake in greased 9 x 13-inch pan at 325° for 1 hour.
