  • 3 c carrots, finely grated
  • 1-1/2 c oil
  • 2 c sugar
  • 2 c flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 4 eggs

Directions

    Beat all ingredients together until well mixed.

    Pour into 2 buttered and floured 8 inch round cake pans.

    Bake at 350° for 35 minutes until toothpick comes out clean.

    Let cool and cover with icing (recipe to follow).
