  • 3 c. raw grated carrots
  • 2 c. flour
  • 2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 1/2 c. oil
  • 2 c. sugar
  • 4 eggs
  • 1 c. raisins

    Grease and flour a 9 x 13-inch pan.

    Preheat oven to 350°. Mix together the flour, baking powder, baking soda, salt and cinnamon.

    Add oil, sugar and eggs; mix well.

    Fold in carrots and raisins.

    Bake for 30 to 45 minutes.
